I’m always trying to make my meals exciting and I love FLAVOR!
I like to watch my carbs and sugar intake so here is a great meal to try!!!!

Roasted Veggies:
I first made roasted red peppers and onions, I sliced them up, tossed them in a little extra virgin olive oil and baked them for about 20-30 mins at 375 degrees.  You want to caramelize them, they come out super sweet and amazing!!!! You could put a little sea salt on them before you bake them too.

Taco Filling:
Next I cooked the beef, I prefer a grass-fed ground beef with homemade taco seasoning, it’s super easy!

In a small bowl, mix together: garlic, onion, chili, cumin powder, a little salt, corn starch.
Once the meat is cooked, I mix the beef w/ the seasoning mix and a 1/2 cup of water.  I let that simmer for about 10 mins.

Preparation:
I then use large romaine lettuce leaves to wrap the taco.
I put in the meat, a tiny bit of cheese, avocado, the roasted red pepper/onion mixture and DINNER is ready :)

    • I’m sorry I don’t have the nutritional facts, I just created this on my own. Everyone’s recipes will vary too.
